- 6 eggs
- 300g / 10 ½ oz caster sugar
- 180g / 6 ¼ oz single cream
- 330g / 11 ¾ oz plain flour
- 1 ½ /25g sachet baking powder
- 180g / 6 ½ oz melted butter
- 150g / 5 ¼ oz dark chocolate
- 60g / 2 ¼ oz pistachio paste
1. Preheat the oven to 150°C/300°F/Gas mark 2.
2. Sift the flour and baking powder together.
3. Whisk the eggs and the caster sugar in a bowl, until the mixture is light and doubles in volume.
4. Add the single cream, then fold in the flour and baking powder.
5. Add the melted butter and mix together until smooth.
6. Melt the chocolate in a bain-marie.
7. Divide the mixture in half. Add the pistachio paste to one half, the melted chocolate to the other half, and mix well.
8. Grease the loaf pan and pour in the pistachio mixture and chocolate mixture, alternating one after the other.
9. Place in the preheated oven for 1h10 minutes. If the surface browns too quickly, cover with some aluminum foil.
10. Check whether the cake is ready by inserting the blade of a knife. It should come out dry.
