Raspberry and marshmallow clafoutis

Ingredients

    • 375g / 13 oz raspberries 
    • 300ml / 10 ½ fl oz full-fat milk 
    • 3 eggs 
    • 4 marshmallows, chopped into small pieces 
    • 80g / 3 oz / 1/3 cup sugar 
    • 100g / 3 ½ oz / ½ cup flour 
    • A pinch of salt 
    • A little butter for the dish 
  • Pre-heat the oven to 180°C / 350°F / Gas Mark 4.  
  • Quickly wash the raspberries in cold water. Dry well with kitchen towel. 
  • Mix the sugar and eggs in a large bowl. Add the flour and salt. Gradually add the milk, stirring continually. 
  • Grease the clafoutis dish and place the chopped marshmallows and the raspberries in the bottom. 
  • Pour the mixture over the top and cook for around 40 minutes. Serve warm or cold.
