Beetroot mousse and rocket sprouts

  • For 8-10 ramekins

Ingredients

    • 4 cooked beetroots 
    • 5 tbsp fromage blanc (cow or goat’s milk) 
    • 1 cup rocket or radish sprouts 
    • 2 cloves garlic 
    • Salt, pepper 

- Reduce the beetroot and garlic cloves to a puree in the blender. 

- Add the fromage blanc and whip until smooth. Season. 

- Sprinkle with the rocket (or radish) sprouts before serving.
