- 4 cooked beetroots
- 5 tbsp fromage blanc (cow or goat’s milk)
- 1 cup rocket or radish sprouts
- 2 cloves garlic
- Salt, pepper
- Reduce the beetroot and garlic cloves to a puree in the blender.
- Add the fromage blanc and whip until smooth. Season.
- Sprinkle with the rocket (or radish) sprouts before serving.
