Hummus

Ingredients

    • 50g / 1.7oz toasted sesame seeds 
    • 4 rounded tsp sesame purée (Tahini) 
    • 3 tsp sesame oil 
    • 100g / 3.5oz cooked chick peas 
    • Juice of 2 lemons 
    • 1 level tsp cumin powder 
    • 1/2 tsp salt 

1/ Pour the toasted sesame seeds into the mortar. 

2/ Keeping the pestle very straight, make circular movements, crushing the seeds to obtain a coarse powder. 

3/ Add the oil, chick peas, lemon juice, cumin and salt and continue to crush and turn together until the mixture is even. Add a little lemon juice or water if you think it is too thick. 

4/ Serve the hummus with raw vegetables or pita bread.
