For the pizza
- 1 ready-made round pizza dough base
- 1 small tin tomato coulis (approx. 20cl) A little dried origano
- 1 ball mozzarella
- 1 small courgette/zucchini
- 8-10 baby tomatoes
- ½ onion, yellow or white
- ¼ red onion
- 12 black olives, pitted
- A few leaves of fresh basil
- 3 sprigs fresh rosemary to decorate
- Optional : 10 slices chorizo

For the dressing
- 12 leaves fresh basil
- 1 garlic clove
- 5 cl cider vinegar
- 10 cl olive oil
- Freshly ground salt & pepper
Preparation :
- Preheat the oven to 240 °C/460°F.
- Wash the courgettes/zucchini and baby tomatoes. Strain and slice the mozzarella. Using a mandolin, slice the courgette/zucchini lengthways, to get 6-8 long, thin slices. Slice the onions into rings and half-rings.
- Sprinkle the Pizza Stone with flour and place the pizza dough on the surface. Pour over the tomato coulis and spread over the entire surface of the dough. Sprinkle the dried origano over the top.
- Place the sliced mozzarella across the surface, then add the yellow (or white) onions, courgette slices, baby tomatoes and olives.
- Cook in the hot oven for 12-14 minutes.
- During this time, prepare the dressing. Place the garlic, basil leaves, olive oil, vinegar, salt and peper in a food processer and whizz together.
- Once cooked, remove the pizza from the oven, sprinkle the red onion rings, rosemary and basil over the top.
- Pour the dressing over the surface just before serving.
Advice & tips
- Make your own pizza dough base :
In a kitchen bowl, mix together 170g/6 oz plain flour, 4g/¾ tsp salt, 30g/1 oz durum wheat flour and 5g/1 tsp dried yeast. Add 100g/10 cl warm water and 2 tablespoons olive oil. Bring the ingredients together using your hands, then knead until smooth with an elastic consistency. Make a ball of dough and leave for 30 minutes covered with a teatowel.
- To spice up your pizza, add some chorizo slices over the top before cooking.
- You can replace the chorizo with thin slices of parma ham, which you add 5 minutes before the end of cooking.
