- 4 chicken breasts
- 1 courgette/zucchini
- 12 cherry tomatoes
- 12 dried apricots
- 2 sprigs thyme
- 2 tbsp curry powder
- 1 tbsp sesame seed oil
- 2 tbsp olive oil
1/ Cut the chicken breasts into 2 cm / 3/4’’ pieces.
2/ Prepare the first 4 kebabs by inserting onto the skewer apricot and chicken, alternating until the skewer is full.
3/ Mix together the curry, sesame oil, and olive oil, then brush this over the kebabs.
4/ Prepare the other 4 kebabs, alternating strips of courgetti / zucchini and cherry tomatoes.
5/ Mix together the olive oil and thym, then brush this over the kebabs.
6/ Place the grillstone on the barbeque and grill until the chicken is cooked through.
